The Story Behind GI.blop: A home-brewed NEIPA Christmas treat from Austria

Christmas is approaching, and with it comes the festive season of sharing and special gestures. This year, we at Gantner Instruments wanted to give our customers and partners something unique for the holidays. So we created a special handcrafted beer we call GI.blop that is not only a great gift but also tells a story.


GI.blop is a New England Indian Pale Ale brewed with the greatest care and passion to not only impress in terms of flavor but also to reflect our love of craftsmanship and our passion for innovation. The name is made up of “GI”, which represents our company, and “blop”, the sound you hear when you open a beer – a moment of excitement and enjoyment that we want to share with every sip of GI.blop.

The idea for this extraordinary beer came from one of our developers, Stefan Stocker, who discovered his passion for brewing. His goal was to create a beer that would not only be delicious but would also emphasize our bond with our valued customers and partners.

To ensure that GI.blop becomes something truly unique, we received support from the Biersiederei in Schruns, Austria. This special brewery started crafting its beer around 6 years ago in a small 20-liter cooking pot. For them, brewing beer means investing a lot of time and love since they fill each bottle by hand. Together with Stefan, the experienced brewers perfected the recipe to achieve the best blend of aromas and flavors.

The brewing process

The journey started with the vision of a New England Indian Pale Ale. The brewers began by carefully selecting the finest malt grains for a robust base to achieve NEIPA’s characteristic texture and haze.

The malt blend was followed by mashing. This involves mixing the malted grain with hot water to convert starch into sugar. The liquid wort is boiled intensively, with a special combination of hops producing a cloudy appearance and a variety of citrus, tropical and pine notes.

Boiling is followed by rapid cooling and the addition of yeast for fermentation, which creates alcohol and the typical fruity aroma of NEIPA. The final dry hopping intensifies the hop character without creating additional bitterness.

The GI.blop was brewed to develop its best taste, specifically around Christmas Eve and is therefore best enjoyed between Christmas and New Year’s Eve. It is recommended to store the bottles in an upright position in darkness at a temperature of around 7-10°C. During this time, the aromas can develop and harmonize and the carbonic acid stability can strengthen.
